Rajma can refer to kidney beans or to the North Indian dish made by simmering them in a seasoned sauce. Serve the beans with rice and you have rajma chawal, a much-loved combination that turns a pantry staple into a deeply comforting meal.

Punjabi-style versions often build flavor with onion, tomato, ginger, garlic and spices. Recipes differ from one kitchen to another: some are thick and creamy, while others have a looser gravy. Rice is very good at dealing with either situation.

What does rajma taste like?

The beans are soft and substantial, with a savory sauce that can be tangy from tomato and warming from spices. Heat varies with the recipe. Some cooks mash a few beans into the gravy for body while keeping the rest whole.

What kind of kidney beans are used?

Red kidney beans are common, though varieties differ in size and color. Dried beans need advance preparation and thorough cooking; canned beans are already cooked and can be used in a quicker adaptation. Follow a recipe written for the form you have, since the timing and liquid will change.

For dried kidney beans: raw or undercooked beans contain lectins that can cause illness. The FDA recommends soaking dried kidney beans for at least five hours, discarding the soaking water and boiling them in fresh water for at least 30 minutes; continue cooking until tender. Do not rely on a slow cooker alone to cook dried kidney beans safely.

Is rajma the same as chili?

Both can feature kidney beans in a seasoned sauce, but their culinary traditions and seasonings are different. Rajma chawal is its own dish, not simply chili that has taken a long flight.

How is it served?

Rice is the classic partner in rajma chawal. Depending on the meal, yogurt, onion or another side may accompany it. If ordering for dietary needs, ask about the fat or finishing ingredients: recipes vary.
