Levantine Pantry Ingredients: A Practical Starting Guide
Build a useful Levantine pantry with chickpeas, bulgur, tahini, seasonings and other versatile staples.

Chickpeas, bulgur, tahini and olive oil are useful places to begin exploring Levantine cooking. Add lemon, herbs and a few seasonings, and you can prepare everything from a simple bean dish to an herb-filled salad. You do not need to buy the entire spice aisle on your first visit.
The Levant contains many communities and food traditions. No single list represents every household or country; this is a starting shelf, not a complete inventory.
| Ingredient | What it brings | A way to use it |
|---|---|---|
| Chickpeas | Creamy body and substance | Hummus, stews or a warm bowl with yogurt |
| Lentils | Earthy flavor; texture varies by variety | Soups, salads and rice dishes |
| Bulgur | Nutty wheat in fine to coarse grades | Tabbouleh, kibbeh or a hearty salad |
| Tahini | Rich sesame flavor | Hummus or a lemony sauce |
| Olive oil | Fruity richness | Dress salads, finish dips and cook vegetables |
| Sumac | Tart, fruity seasoning | Sprinkle over salads or onions |
| Za'atar | An aromatic herb-and-spice blend; recipes vary | Enjoy with olive oil and bread or over yogurt |
| Pomegranate molasses | Tangy fruit concentrate | Add a little to a dressing or muhammara |
Start with a meal, not a shopping list
For an herb-forward tabbouleh, buy fine bulgur, parsley, tomato and lemon, then follow a recipe for the balance you like. For hummus, cooked chickpeas and tahini are useful foundations. For a quick snack, labneh, olive oil and za'atar make a satisfying combination with bread.
Seasonings are not interchangeable: sumac is tart, while za'atar is a blend that can include herbs, sesame and sumac. Pomegranate molasses varies in sweetness and acidity by brand, so taste before adding a large amount.
How should you store them?
Keep dried pulses and grains in closed containers in a cool, dry place, and follow each product's date and storage instructions. Tahini can separate; stir it and follow its label. Refrigerate perishable foods such as labneh and prepared dips, and chill leftovers promptly.
Tahini contains sesame, a common allergen. Za'atar blends may contain sesame too. Read labels and choose ingredients appropriate to the people you're serving.
