Ful medames is a dish of cooked fava beans, often served warm with oil, cumin, lemon and bread. It is a familiar Egyptian breakfast, enjoyed at home and elsewhere, with variations across the Middle East and beyond. You may also see it spelled ful medammes or foul mudammas.

The beans can be left mostly whole or partly mashed. Either way, the idea is a satisfying bowl you can scoop up with bread—not a test of how elegantly you can use a fork before breakfast.

What is ful medames made of?

The foundation is fava beans, also called broad beans. Cooks season them in different ways: garlic, cumin, lemon juice and olive oil are common additions, while tomato, onion, parsley, chili or tahini may appear as toppings. Tahini is not required in every version.

Long-cooked dried favas give the dish its traditional base in many preparations. Canned cooked fava beans are a convenient option for a quicker meal. Check the label: some cans already contain seasoning, so taste before adding more salt or spices.

What does it taste like?

Expect an earthy, savory bean flavor, brightened by lemon and rounded by oil. Mashing some of the beans makes the dish creamy while leaving others whole for texture. Cumin adds warmth; chili, if used, brings heat. A topping of chopped vegetables adds freshness and crunch.

How is it served?

In Egypt, ful is often eaten with eish baladi, a local flatbread, and may share the table with vegetables, pickles, eggs or other breakfast dishes. It can also be served at other times of day. A simple bowl with warm flatbread and lemon is a good introduction.

Is it vegetarian or vegan?

The beans and an oil-based seasoning can be vegan, but accompaniments and additions vary. Some plates include eggs, cheese or other animal products. Ask about the particular preparation if you need to avoid them, and check for sesame if tahini is added.

Can you use another bean?

Fava beans give ful its characteristic flavor and texture. Another cooked bean can make an enjoyable mash with cumin and lemon, but it will taste different. If you can't find dried favas, look for canned fava beans or canned ful in a Middle Eastern grocery; they may be labeled broad beans.

Fava beans can trigger serious reactions in people with the inherited condition G6PD deficiency. Anyone advised to avoid them should follow their clinician's guidance.
