Dal Makhani: What Is in This Creamy Punjabi Dal?
Discover the ingredients, texture and traditions of dal makhani, plus guidance for preparing its beans safely.

Dal makhani is a rich Punjabi dal made with whole black urad, often with a smaller amount of kidney beans, simmered with aromatics and finished with butter or cream. It is deeply savory, gently spiced and comforting with rice or flatbread.
The word makhani refers to butter, which gives you a useful clue about the dish. It also gives your naan something excellent to mop up.
What is dal makhani made of?
The key ingredient is whole black urad, also called whole black gram or sabut urad. Its black skin stays on. Although it is often called a black lentil in English recipes, urad is a different pulse from the black beluga lentils sold for salads.
Many versions add kidney beans (rajma), along with tomato, ginger, garlic and spices. Butter and cream make the finished dal rich, though recipes vary in how much dairy they use. Some cooks add a smoky note; others let the slow-simmered pulses and aromatics do the talking.
What does it taste like?
Expect an earthy, savory flavor and a thick, creamy sauce. Tomato can add a gentle tang, while spices and dairy round out the dish. Heat varies with the recipe, so a restaurant's dal makhani may be mild or noticeably spicy.
Slow cooking helps the urad soften and the sauce thicken. Some recipes mash a little of the cooked dal into the sauce while leaving some of the pulses intact. The finished texture is creamy, with more going on than a completely smooth purée.
Is it the same as dal tadka?
They are both dal dishes, but they are not interchangeable descriptions. Dal makhani commonly centers on whole black urad and dairy. Dal tadka takes its name from the tadka: spices and aromatics warmed in fat and added to the cooked dal. The pulses and seasoning in dal tadka vary by recipe.
What should you serve with it?
Steamed rice makes a simple base. Roti, naan or paratha are useful for scooping up the sauce, and a fresh salad or pickle can add contrast to its richness. A smaller portion also works alongside other dishes as part of a larger meal.
Is dal makhani vegan?
Usually not: butter and cream are common ingredients. Vegan versions exist, but ask about dairy when ordering, and check packaged versions rather than assuming they are plant-based.
Shopping for the right pulse
For the characteristic appearance and texture, look for whole urad with the black skin on. Split or skinless urad cooks differently, and black beluga lentils are a different ingredient. If using dried kidney beans, follow reliable food-safety guidance: the US FDA advises soaking them for at least five hours, discarding the soaking water, and boiling in fresh water for at least 30 minutes to destroy their natural toxin.
