Navy beans are small, oval white beans with a mild flavor. They soften into a creamy texture and are especially useful in soups, baked beans and purées. In the UK, you may encounter the related name haricot beans; check the product description when adapting a recipe across countries.

The name “navy” comes from their historical use in the US Navy's diet. The beans themselves, to avoid disappointment, are white.

What do navy beans taste like?

They are mild, with a tender, creamy interior. In a soup they can release starch as they cook, helping the broth thicken. For a smooth dip, mash or blend cooked beans with olive oil, garlic and lemon; for baked beans, let them absorb the sauce without cooking them to a paste.

Navy beans versus Great Northern and cannellini

All three are white beans, but navy beans are usually the smallest. Great Northern beans are medium-sized and generally hold their shape better during simmering. Cannellini are larger, kidney-shaped white beans with a creamy center.

Great Northern beans can replace navy beans in many soups, with a slightly more distinct texture. Cannellini also work, though the larger beans change the appearance. For a dip, any of them can be blended; adjust the liquid to get the consistency you like.

How to cook navy beans

For dried beans, sort and rinse, then soak according to the package or a reliable recipe. Discard the soaking water, add fresh water and simmer until fully tender, adding water as needed. The Bean Institute lists 90–120 minutes after soaking for navy beans as a starting guide; age, soaking and cooking conditions affect the time.

Check several beans for a soft center rather than relying only on the clock. Canned navy beans are already cooked: drain and rinse if the recipe calls for it, then warm them in the sauce or soup.

Are navy beans the same as baked beans?

Navy beans are an ingredient; baked beans are a prepared dish. Some baked bean recipes use navy beans, but canned baked beans come in a seasoned sauce and may include sugar or other ingredients. They're not a direct replacement for plain beans in every recipe, especially a savory dip or salad.
