Roasted Mushrooms and Asparagus

  • 1 bunch fresh asparagus, trimmed
  • ½ lb fresh button mushrooms, quartered
  • 2 sprigs rosemary, minced
  • 3 tsp olive oil
  • Salt and pepper to taste

 

Both asparagus and mushrooms help fight cardiovascular disease as well as cancer. Preheat your oven to 450°F and lightly grease a baking sheet with 1 tsp olive oil. Place the asparagus and mushrooms in a bowl and drizzle in the remaining olive oil. Season with salt, pepper, and rosemary and toss to coat. Lay the mushrooms and asparagus on the baking sheet and spread evenly before placing in the oven to bake for 15 minutes. This recipe makes six servings.
